FYI: Gabriel is male. I know because I have met him personally. He is an angel-incarnate named Levi Stein. Has a daughter named Lea after his mother when be was born to Jacob (aka Isreal; Jesus Christ). He has the playful, sarcastic personality much the same as portrayed in film.

Gabriel is above gender, as all angels are. She appears to everyone however she needs to. She is often depicted as feminine likely because of her association with the moon. She has likely appeared to many as feminine to accommodate them.
